Pancit Malabon

Here’s a dish that I would love to try to make it and it’s really tasty as well!! Apparently this is a “sister” of Pancit Palabok as it’s the same ingredients but it has other ingredients that makes it quite unique on its own.  The name comes from the city of Malabon where it sits near the coast which explains the seafood ingredients: squid, fish flakes and oysters.  It’s one of those noodle dishes where you know there’s something special going on in your house when you see this dish served on the dinner table.  Also thanks to the FOODIPINO where I came across this dish. Pancit Malabon

 Ingredients
  • 1 lb rice noodles (thick variety)
  • Toppings:
  • 3/4 lb shrimp, shelled, deveined, cooked, and sliced lengthwise
  • 1/2 lb adobong pusit, sliced
  • 1/2 cup pork rinds (chicharon), pounded
  • 1 cup napa cabbage or “pechay baguio”, chopped then blanched
  • 1 lemon, quartered (or ‘calamansi’ as needed)
  • 1 cup smoked fish (tinapa) flakes
  • 4 hard-boiled eggs, peeled, sliced
  • 1 tbsp parsley, chopped
  • 2 tbsp green onions, chopped
  • 3 tbsp toasted garlic
  • 1/2 cup lechon, sliced (optional)
  • Sauce:
  • 1 tbsp fresh garlic (minced)
  • 1 medium onion (minced)
  • 1/2 lb boiled pork belly (sliced)
  • 1/2 cup anatto seeds diluted in 1/2 cup water
  • 3/4 cup shrimp juice (from shrimp heads*)
  • 4 tbsp fish sauce (patis)
  • 1/2 tsp black pepper (ground)
  • 1/4 cup pork rind (chicharon), pounded
  • *Tip for shrimp juice extraction: For a more flavorful and fragrant shrimp juice, remove the spiny head, leaving the soft, orangy ones. In a non-stick pan, put about 1 tbsp oil, and stir fry the head to release the aroma. Add 2 ½ cups water, pinch of salt and pepper and bring to a boil for about 5 minutes. Let it cool a bit and give it a whir in the blender. Strain and press to get all that shrimp goodness.

Instructions

  1. Cook the noodles according to package instructions. Note: If you are using the traditional Pancit Malabon noodles, you will need to soak it in water overnight before cooking. Set aside.
  2. Sauté the minced garlic and onion.
  3. Put in chopped boiled pork and cook for 4 mins.
  4. Add fish sauce and ground black pepper.
  5. Pour shrimp juice and annatto water and bring to a boil.
  6. Sprinkle pounded pork rinds (chicharon) then stir.
  7. Simmer for 4 minutes then turn off heat.
  8. Put the cooked noodles in a large bowl then pour the sauce and mix thoroughly.
  9. Transfer the noodle/sauce mixture in a wide serving plate.
  10. Place toppings according to your preference.
  11. Serve with lemon or calamansi.

Olympic Torch ~ passing Hounslow Bus Garage

Okay today was the day that the Olympic Torch will pass thru Hounslow High Street thru to Ealing.  It started this morning at Kingston, Hayes, Isleworth, and I don’t know what other boroughs of the London Area, but it came pass Hounslow around noonish time.  There will a lot of bystander and the whole of Hounslow High Street was packed with so many people…it was kinda cool to witness it all. I’m glad that I did decide to go and see it and to video it was even more fantastic.  Ian took a shot of the torch passing with the background of the Hounslow Bus Garage which they will be used for their weekly/monthly newsletter which was cool. I took a shot of one of the H & T Branch in Hounslow, and one of my colleague got a great shot of the torch passing thru with the background of the shop!! AWESOME!!  Without further delay here is the video:

Miss Universe Results for Miss Philippines

I found out that Miss Philippines was 3rd runner up for the
Miss  Universe competition which was held in Sao Paolo, Brazil sometime in the month of September!  Doing my research online all the buzz was about how Miss Shamcey Supsup handled herself and the her answer to Vivica Fox question… in reading her answers I think she held herself quite well and showed her family upbringing shine thru!  I then got to see her pictures, and WOW.. she is a beauty! I am very proud that the was 3rd runner up and like someone said that it might be our time, but we will hold that title once again!
