Greek Pasta Salad
Okay, hubby found this recipe and its really quick and easy to prepare and its a delish meal to have! We were going to Pajama Party and we needed to bring a dish of some sort for nibbling – it was also a wine tasting party in our pj’s…so hubby search and found this recipe…its really tasty and yummy and let me know what you think?
Recipe: Greek Pasta Salad |

Ingredients: |
- 4 tomato\raw, seeded and diced
- 1/3 Lbs. feta cheese, crumbled
- 4 scallion, minced
- 3 Tbs. olive oil
- 1/4 cup watercress (optional), chopped
- 1 Tbs. lemon juice
- 1/2 cup Kalamata or other black olives
- 3/4 Lbs. fusilli or large elbow macaroni
- 1/8 tsp. salt (optional)
- 1 green bell pepper\raw, seeded and cut into julienne strips
- 1 lemon, cut into wedges

Cooking Directions: |
Combine first 7 ingredients in a salad bowl. Cook pasta in boiling water until al dente. Drain pasta and rinse under cold water. Drain thoroughly. Stir pasta into tomato mixture. Season with salt and pepper to taste. Garnish salad with bell peppers and lemon wedges.
