Okay, I never knew that it was called Humba, all I knew was that when Mom made it, it was very yummy!  This is just another basic Filipino foods that I grew up on.  I can’t eat some of it, as due to my cholesterol and high blood pressure which is hereditary.  So, I have to watch what I eat.  I have cut down on rice and now if we do have it, it is brown rice.  But, here is the recipe and brief description of this wonderful food and hope you try it and let us know what you think.  Thanks Philippines Food & Recipes

Humba (Braised Pork Belly) Recipe is one of the most popular Filipino authentic dish. A typical Humba dish is served with potatoes and hard-boiled eggs on top of it. To add-on it, this recipe do have a distinctive sweetened taste.

Below is a typical humba recipe that you may find quite delectable. 

Humba Recipe Ingredients :

· 1 lb. pork cut into pieces
· 1/3 cup vinegar
· 1/4 cup packed brown sugar
· 1/4 cup soy sauce
· 1 bay leaf
· 1/4 tsp. pepper or 1 tsp. peppercorns
· 1 cup water
· 3 cloves crushed garlic
· 1 tsp. oil
· salt

Optional – Add on Ingredients

· 3 peeled and quartered potatoes
· hard-boiled eggs

Humba Cooking Procedures :

1). Mix all ingredients in a big pot and boil. Lower heat and simmer for about an hour until pork belly is tender.

2). Add (optional) potatoes and hard-boiled eggs in this dish. Potatoes usually cook about 15 minutes. Choose whether, you like it soft or just tender for you to bite. You may also include it on halfway of cooking.

3). Let the hard-boiled egg sits for a few minutes before its done so that the sauces can cover it.

4). Remove the bay leaf and peppercorns before serving. Serve while its hot.
